Upcoming Alabama Curio Collection hotel unveils F&B plans

106 Jefferson—a Curio Collection by Hilton hotel and Valor Hospitality Partners property in Huntsville, Ala.—has announced its culinary leadership team and concepts. The hotel is scheduled to open in late summer 2021 and it will have two onsite dining options developed by Executive Chef Matthew Mohler.
 
106 Jefferson’s full-service restaurant, Revivalist, will serve breakfast, lunch and dinner. The dining menu is inspired by European classics and American regionalism with locally sourced meats and vegetables. The whiskey- and bourbon-forward bar menu will serve signature cocktails. The restaurant  also will have a private dining room and outdoor terrace. 
 
The rooftop lounge, Baker & Able, will serve cocktails, appetizers and desserts, many of which will include homegrown ingredients from the adjacent garden. The rooftop lounge pays homage to the two primates, named Baker and Able, who were the first to survive space flight in a Huntsville-built Jupiter rocket. 
 
"I have always held a deep appreciation for where food comes from and for crafting complex flavors using local and seasonal ingredients,” Mohler said “I’m excited to bring this perspective, along with my international and sommelier background, to 106 Jefferson and provide guests and the community a dining experience they won’t soon forget.”
 
Mohler brings 24 years of culinary and sommelier experience to 106 Jefferson. He previously served as chef de cuisine at the Hyatt Regency Sochi in Russia during the 2014 Winter Olympics and spearheaded the opening of the Formula One Circuit. Most recently, Mohler was the executive chef of the only Relais & Chateaux property in Florida. He is a graduate of Culinary Institute of America and has staged at Alain Ducasse’s restaurants.
