Hyatt adds Mexican boutique hotel to Unbound Collection

Hyatt Hotels Corp. has opened Rancho Pescadero in Mexico's Baja California Sur as the newest addition to its Unbound Collection soft brand. Founder and owner Lisa Harper opened the property with 12 rooms in 2009 on what had been a poblano chili farm since 1938. After a four-year closure and renovation, the property has reopened under the Hyatt umbrella.

The 30-acre resort has 1,100 feet of ocean frontage with nine interconnected gardens, two farms and a citrus orchard that drive its culinary and wellness programs. It also has a sea turtle hatchery, a tropical bird sanctuary and paths for hiking and biking. Designed by Mexican architect Alejandra Templeton of Los Cabos-based Indigo Añil, the resort has a "light and airy" aesthetic characterized by neutral tones and clean lines juxtaposed by playful textures that blend with their surroundings.

The 12 oceanfront villas are built into the dunes along the shoreline. Each one has direct beach access, outdoor showers, patios with plunge pools and fire pits. The additional 91 rooms and suites include private roof decks and outdoor living spaces with day beds. 

The resort also has three dining concepts overseen by culinary director Sandro Falbo as well as a cocktail bar and a rooftop breakfast bar. Other public spaces include a 25,000-square-foot spa and an onsite apothecary. Wellness amenities include a hydrotherapy circuit with an ice fountain, a steam room, a shower and Himalayan salt sauna; Reformer pilates; a mix of traditional and aerial yoga; a lap pool edged with palm trees; pickleball courts; and an indoor/outdoor gym.
